In the Karst region of Slovenia, you’ll find the humble 1,5 hectares of vineyards tended by Matej Svara, a dedicated winemaker whose family roots run deep in viticulture. Raised in this environment, Matej learned the ropes of winemaking from a young age, instilling in him a respect for tradition and a keen understanding of the local terroir.
Matej’s approach to winemaking is grounded in simplicity and sustainability. He believes in letting the grapes speak for themselves, practicing minimal intervention both in the vineyard and the cellar. By working closely with nature and allowing the grapes to fully express their character, Matej produces wines that are authentic reflections of their surroundings.
Matej works with Vitovska, Malvasia and Teran, the most typical varieties of the region; all the labor is manual. He follows not only organic, but cosmo-cultural approach. In the cellar there are no wooden barrels, only glass demijohns and – since recently – an amphora.
Matej used to work as a chef, so he also appreciates an easy combination of his wines with rich, flavorful cuisine. He loves to travel and a few times a year he easily hops in his car to go to Italy or other countries around.
