Their journey towards biodynamics began after a challenging harvest in 2012, prompting them to seek a fresh start in line with their values. Rejecting the conventional use of pesticides and chemical inputs, they transitioned their vineyards to organic farming in 2012 and fully embraced biodynamics in 2013.
For Marc, innovation is key to finding meaning in life. He constantly experiments with new techniques such as planting flax between vines and practicing permaculture to preserve biodiversity. These practices, along with a deep respect for the environment, ensure that Augustin champagnes faithfully reflect their terroir.
Their commitment to biodynamics extends to every aspect of their winemaking process. From non-traumatic pruning of vines in winter to careful selection of harvest days based on the lunar calendar, every decision is made with the goal of preserving the natural characteristics of the grapes.
In the cellar, Marc's approach to winemaking is equally mindful. Rejecting artificial interventions, he prefers minimal to zero sulfur and sugar usage, applying yeast culture selected from the own vineyards, and employs vessels such as clay amphorae and wooden barrels to allow the wines to express themselves fully.
Their dedication to their craft is evident in every aspect of their lives. Emmanuelle's passion for healing therapies like reflexology and homeopathy complements Marc's approach to winemaking. Together, they believe in the importance of listening to nature and following their hearts in all they do.
