JNK winery run by Kristina Mervič manages 3.5 hectares of vineyards situated on marlaceous soil, ranging from 100 to 300 meters above sea level. These vineyards are positioned on slopes with a gradient of 30-45%, resulting in wines with rich aroma and acidity. The unique marlaceous soil imparts minerals to the wines. They specialize in white grape varieties like Rebula, Chardonnay, Green Sauvignon (jakot.e), Pinot Blanc, Malvasia, along with red varieties like Cabernet Sauvignon and Merlot.
Operating within Slovenia's authorised integrated production system, they prioritize quality, resulting in a smaller harvest per vine. Their meticulous grape selection process begins at harvest. After separation, white grapes undergo maceration for 3-5 days, sometimes up to 8 days, while red grapes macerate for approximately 30-40 days. Maturation takes place in oak barrels for 1-2 years, with the wines often resting on their lees. They aim to craft wines suitable for extended aging, typically releasing them after 3-4 years or more, with an additional year of bottle aging.
Their winemaking philosophy centers on nurturing high-quality grapes essential for crafting premium wines with protected geographical indication.
