The WAW Project, conceived by Luca Gargano ("Triple A" Italy) alongside Japanese photographers Keiko Kato and Maika Masuko, focuses on creating “primitive” wines in amphora—pure, original, and deeply connected to nature. WAW embodies the art of subtraction, returning wine to its historical essence before industrialization turned it into a mere commodity. These wines are crafted “as before,” free from modern technology and manipulation, reflecting a timeless simplicity and expressive authenticity.
WAW wines are rooted in ancient methods, relying solely on grapes and amphorae, with no intervention: manual harvesting, whole-bunch fermentation in amphorae, long maceration (3-7 months), and bottling without pressing. There are no mechanical processes like punching down or pumping over. This minimalist approach underscores the belief that wine is made in the vineyard, making WAW wines truly agricultural.
The wines use a single ingredient: grapes, with a mix of 78% white and 22% black varieties, all vinified in handcrafted Spanish amphorae by Orozco de Villarobledo. The project unites producers from different nations, emphasizing collaboration and a shared commitment to natural winemaking. WAW is a growing movement, driven by passion and creativity, unbound by commercial constraints and open to like-minded winemakers.
