Situated near Znojmo in the western reaches of viticultural Moravia, Martin Vajčner emerges as a winemaker whose journey combines extensive experience, unassuming humility, and a relatively recent foray into winemaking. Before founding his independent winemaking venture in 2018, Vajčner spent over a decade as the viticultural research director for the Czech Republic's ministry of agriculture. During this tenure, he played a pivotal role in converting state-owned vineyards to organic agriculture.

Vajčner's inspiration for natural winemaking originated from influential figures such as his former professor Jaroslav Osička and the vigneron Petr Nejedlik of Dobrá Vinice. Over the years, his commitment to organic farming expanded, and by 2023, he managed 5.3 hectares of organic vineyards, employing minimal spraying and nearly zero copper.

The vineyards boast a diverse array of grape varieties, including Grüner Veltliner, Welschriesling, Riesling, Sauvignon Blanc, Pinot Blanc, Mülller Thurgau, Chardonnay, Blaufränkisch, Pinot Noir, Zweigelt, Alibernet, and Saint Laurent. Knowing a lot about geology, he attributes the uniqueness of the Znojmo region to its location at the convergence of the Bohemian massif and the Western Carpathians. This results in soils with a spectrum ranging from granitic and quartzic sandy sea sediments to heavier clays and river sediments. Several of his - or leased - vineyards lie within or adjacent to a national park, ensuring that the soil, already surpassing organic standards, benefits from long-standing legal preservation of the biome and soil health. All grapes undergo manual processing: harvest by hand, grape crushing by foot power.
In the cellar, Vajčner adopts a progressive approach, incorporating Czech Republic-made amphorae from the 1990s, custom-made qvevri from local clays, and engaging in year-long macerations. His aging process involves the use of various used oak and acacia barrels from different regions. The wines are never neither filtered nor clarified, and most of them are bottled without any sulfur.

Vajčner's wine portfolio encompasses terroir-driven varietal wines and experimental multi-varietal blends, each label uniquely designed. The recurring egg icon on many labels serves as a playful reference to his last name, reminiscent of "egg man" in Czech. The Vajčner family's viticultural lineage traces back to 1636.

Despite the growing acclaim and demand for his wines, Vajčner remains ardently passionate, steering the expansion personally and reinvesting earnings back into the vineyards. His commitment to natural winemaking, coupled with an unwavering focus on detail, positions him as a rising star, promising an exciting trajectory in the world of wine.
